Kapustnica (Cabbage Soup)

Kapustnica is a traditional Slovak soup made with sauerkraut and sausage, typically enjoyed during Christmas.

Ingredients:

  • 1 lb sauerkraut
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp paprika
  • 1 tsp caraway seeds
  • 1 bay leaf
  • 1 cup dried mushrooms, soaked and chopped
  • 4 cups beef broth
  • Salt and pepper to taste

Instructions:

  1. In a large pot, sauté the onion and garlic until soft.
  2. Add the paprika, caraway seeds, and bay leaf, cooking for another minute.
  3. Add the sauerkraut, mushrooms, sausage, and beef broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. Season with salt and pepper to taste.
