This easy and popular dish, Piyaz, is made with white beans, onions, tomatoes, parsley, and garlic. Mixed with a vinaigrette and fresh lemon juice, it is a refreshing side all year long. It’s great to make ahead and keep refrigerated for the best flavor.

- 1 small red onion, thinly sliced and halved
- ¼ cup of extra virgin olive oil
- 5 tablespoons of red wine vinegar

- 2 teaspoons of sumac, a Middle-Eastern spice
- 1 large can (15 ounces) of cannellini beans (or any white beans)
- 3 Roma tomatoes, preferably cut in wedges
- ½ cup of fresh parsley
