This Turkish street food is a savory pastry that is made from a phyllo dough. It was first brought to Turkey by European herders hundreds of years ago. It’s a mix between lasagna and pie.
Ingredients
- 1 lb phyllo dough, thawed
- 2 cups of part-skim ricotta cheese
- 2 cups of feta cheese
- ½ cup olive oil
- 1 bunch of minced parsley
- 1 small onion, minced
- 3 eggs
- 1 ½ liters of mineral water
Directions
- Preheat the oven to 350 degrees and oil your baking pan (16-inch round or 9 x 13”).
- Combine onion, cheese, parsley, and one egg and mix until smooth.
- Spread a sheet of phyllo dough out and brush with olive oil. Layer to your liking.
- Spread cheese mixture.
- Roll up from the long side and coil the roll.
- Repeat the steps with the dough and cheese continuously as you’re making one spiral.
- Beat the remaining eggs and pour over the rolls.
- Pour the mineral oil over that and put it in the oven to bake for about 30 minutes or until the top is crisp and golden brown.
