Ingredients
French Fries
- 4 large potatoes, preferably Russet
- Vegetable oil for frying
- Salt to taste
Gravy
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups beef or chicken broth
- 1/4 teaspoon ground black pepper
- Salt to taste
Cheese Curds
- 1 1/2 cups fresh cheese curds
Instructions
- Prepare the Fries:
- Peel and cut the potatoes into sticks. Rinse in cold water to remove excess starch.
- Heat oil in a deep fryer or large pot to 300°F (150°C). Blanche the fries in batches for about 4-5 minutes each. They should be cooked but not browned. Remove and drain on paper towels.
- Increase the heat of the oil to 375°F (190°C). Fry the potatoes again until golden and crispy, about 2-3 minutes. Drain and season with salt.
- Make the Gravy:
- In a saucepan, melt the butter over medium heat. Add flour and cook, stirring, for about 5 minutes without browning.
- Gradually whisk in the broth. Bring to a boil, reduce heat, and simmer until the gravy thickens. Season with pepper and salt to taste.
- Assemble the Poutine:
- Place a portion of the hot fries in a dish or bowl.
- Sprinkle a generous amount of cheese curds on top.
- Pour hot gravy over the fries and cheese curds. The heat from the gravy should slightly melt the cheese curds.
- Serve immediately and enjoy the comforting goodness of classic Quebecois poutine!
